She attempted MIL Mission #27: Larb Gai!
♥Here’s what she had to say.♥
Hey Ladies!
It’s about time I get to cookin’ right along with you! So, it was Katie’s birthday the other day and she loves herself some PF Changs lettuce wraps, so I decided to whip up some larb for her. It was a huge hit - the whole fam loved it! I set out a bowl of larb with a platter of butter lettuce and side of white rice, for a simple summer dinner and it was devoured, along with our yummy cocktails (triple sec, coconut rum and citrus sparkling water). This is definitely going on the summer dinner menu…and since we’re moving into our new house this week and will probably have guests over for dinner - it’s also a delicious, quick and inexpensive meal to serve to guests! I substituted chopped peanuts for the toasted and ground rice because…well…it was a last minute dinner and that saved me a few minutes. The other thing I like about this meal is it’s gluten free and since I’m cooking for my dad, who has celiac disease, gluten free is a must and it’s always nice to have new gluten free meal options. Well, I better sign off, since Callum just got a hold of the scissors and almost cut a hole in his new shorts (which I just replaced, due to another scissor incident). I know, I know - take away the scissors! But he loves cutting paper!
Loves to you my cousins and aunty!

Ash, your Larb Gai looks absolutely delicious. And way to wing it MIL-style. Ok, now go tell Callum to stop running with scissors.
Your aunty and cousins hope to be sipping sparkly coconut cocktails with you soon. Loves!
