She's currently focusing her talents on food styling and on-site chef services for film scenes and group gatherings (hey tweens - she did the food styling on the twilight movie!). Oh, and writes MIL Missions for this little blog.

♥WHEN YOUR MIL (mother-in-law) IS A CHEF, YOU EITHER GET NERVOUS OR GET COOKING.♥
----------------------------------------------- Two busy DILs living on two different coasts getting long-distance cooking lessons from their MIL. |
Oven temp: 300 degrees
Baking time: 45 min - 1 hour

Servings: lots!

♥MIL DIRECTIONS.♥
Prep
In large bowl, mix hot water and honey. Mix thoroughly and add brown sugar, vanilla, corn oil, salt. Mix again and add all at once: oats, nuts and coconut, stirring until oats are completely coated.
Spread on baking sheets (cookie sheets or pans with “sides”) using 2-3 pans as needed; mixture should only be 1/4” thick so it will brown evenly and quickly.
Baking
Bake until golden brown and crunchy, approximately 45 minutes, stirring every every 15 minutes so granola browns evenly. Watch that the outside edges don’t get too dark.
Note: Increase the temperature to speed up the process, but check every 10 minutes as granola will brown quickly at a higher temp.
When golden brown, remove from oven.
Add raisins
Stir in raisins and cool completely
Storage
Store in tightly covered container.I like it best cold, so keep it in the fridge, but room temp is fine. You can also freeze it.
♥WAYS TO “just wing it”.♥ consider these substitutions
Oil: grapeseed oil, canola oil
Golden raisins: dark raisins or any dried fruit or fruit combination
